We started with a still, a question, and too much free time.
Flatcap began as a weekend project in a garage — a secondhand pot still, a notebook full of failed experiments, and a stubborn belief that good spirits shouldn't require a factory.
What kept us going was the first batch that actually tasted like something. Not generic. Not diluted. Just honest, clear, and unmistakably our own. That batch became our first vodka. The second became our gin. The third — the one we still make today — is the rye and oak bourbon you'll find on our shelf.
We moved into our current space in 2019, expanded to three copper stills, and never lost the habit of checking every batch by hand. Our tasting room is open to walk-ins, and our door is always open to anyone who wants to know how their drink was made.
